I am super excited to share this recipe with you today! It is really easy and SUPER DELICIOUS!! I know I have mentioned before about my LOVE for Tex Mex. Well here is a GREAT, EASY, and INEXPENSIVE recipe for making Taquitos and Spanish Rice.
You will need:
- a pack of corn tortillas. white tend to be easier to work with.
- 2 lbs of bone in chicken. any cuts work.
- 12 oz or larger jar of salsa. any kind you like.
- 2 cups of rice
- dried bay leaf
- salt
- pepper
- vegetable oil
First, boil your chicken in a large pot with a few teaspoons of salt and a dried bay leaf. You will need to boil the chicken for about 45 minutes or longer. The longer you boil the more shredded the chicken becomes. I used a few leg quarters when I made this batch. Once your chicken is done drain it and set it aside to cool down.
Now, we start on the rice. Brown your rice in 2 tablespoons of oil over med heat. Brown it just until it’s a nice golden tan color. Now, cook your rice according to package instructions but add half the jar of salsa (6oz.). Set a timer for your rice so you do not forget about it while your preparing your taquitos. While your rice is cooking, begin to pull your cooked chicken off the bones and shred it. In a large bowl mix chicken with a little salt and pepper to taste and about 3 ounces of salsa.
Place enough oil to cover the bottom of your skillet and heat over med to med-high heat. The oil should shimmer when it is ready. Take about 6 tortillas at a time and microwave them for about a minute or two (depending on your microwave wattage). Microwave your tortillas with a damp paper towel on top. Place your marinated shredded chicken down the center of a warmed tortilla. Roll the tortilla and tuck the chicken in at the ends, this helps prevents the pieces of chicken from falling out while frying. Place your taquito into the oil flap side down. This keeps your taquito closed up. Do this with just enough taquitos to fill your skillet but not overcrowd it. Flip your taquitos after just a couple minutes. They will only need to fry for a couple minutes on each side. You want them a light golden brown. Place your cooked taquitos on a paper towel to drain.
At some point your rice will be finished. Take it off the heat but do not touch it. LID DOWN until it is time to serve. Once taquitos are done sprinkle them with salt and serve them with the rest of your salsa, queso or guacamole. Fluff your rice with a fork and serve with your taquitos. Delicious, easy, and they taste better than any taquito I have ever had at a Mexican Restaurant! I promise y’all they do!!
