Oh my goodness, y’all! This is the cake of all cakes! It’s the QUEEN of Cakeland! It is so delicious it defies description! It’s PERFECT for Spring/Summer time! Heck, it’s perfect for ANY time!!
For my birthday my sister Kari made me a PW Pig Cake. So sweet right? She actually used sugar free pudding, mandarin oranges and pineapples in light syrup and it was JUST AS DELICIOUS!!!

FOR THE CAKE:
1 box (18.25 Oz. Box) Yellow Cake Mix
1 stick Margarine (softened)
1 can (14 Oz. Can) Mandarin Oranges, Drained, 1/2 Cup Juice Reserved
4 whole Eggs
1 teaspoon Vanilla Extract
FOR THE TOPPING:
1 package (4 Oz. Box) Vanilla Instant Pudding Mix
1 can (20 Oz. Can) Crushed Pineapple, Juice Reserved
½ cups Powdered Sugar
4 ounces, fluid Frozen Whipped Topping (such As Cool Whip)
Extra Mandarin Orange Slices, For Garnish

OH My Goodness!!! I grew up having that cake as my birthday cake every year. I requested that cake, but we called it Pig Pickin Cake. My Mom would make that for me every year and when I felt bad. Thank you so much for sharing the cake. You are right, the picture and looks of the cake don't do it justice!!!! It is Awesome!!!!

My mom used to make a cake similar to this. She used a store bought angel food cake as the base. The cake was torn into pieces and a mix of the oranges and crushed pineapple were mixed with Knox Gelatin and poured over the cake pieces. Then she topped it with Dream Whip, shredded coconut and maraschino cherries. It was THE BOMB. I wish I had the exact recipe but I am going on memory.
