How To Make Delicious Iced Coffee At Home

I’ve been using the Pioneer Woman’s Perfect Iced Coffee recipe for a while now.  Over time it’s been tweaked here and there.  Much like she did with the recipe she found and thus creating her own Perfect Iced Coffee.  So you could say this is Ami’s PERFECT Iced Coffee Recipe.

First, her recipe suggests buying Cafe Bustelo which can be found at Walmart, Target, Kroger, etc.  You shouldn’t have a problem finding it. It’s PERFECT for iced coffee.

So you will need:
Cafe Bustelo or a good strong ground coffee will do
half n half, milk or cream
water
ice
sweetener

I’ve done the over night steeping method she calls for in her recipe many many times.  I have also done the brew extra strong coffee in my coffee maker and let it cool over night in the fridge method.  I do the drip brew when I don’t have time in the morning to strain the over night grounds.  I honestly can’t tell a difference in either.  So I would say which ever works best for y’all.  Both are measured the same.  For my recipe I use a tablespoon (NOT heaping) of coffee for each cup of water plus 2.  So 10 cups of water would be 12 tablespoons.  This comes out strong…good and strong I would say.

If you do the over night steeping method, measure your water and add coffee to it.  If you’re not sure you want it as strong as mine I would suggest adding 1 tablespoon per cup of water.  Once you add coffee stir it up gently and cover it.  I make mine in a 2 quart pitcher and cover it with plastic wrap.  Leave it out over night.  It needs to steep at room temperature and for at least 8 hours.  Then slowly strain the coffee.  This is my super high tech straining device.

I strain the coffee through two mesh filters and a coffee filter.  Once it’s done straining place it in the fridge and let it get cold.  Then pour over ice and add as much half n half and sweetener as you like.  You can also buy flavor syrups to create your own flavored iced coffee.

It’s really easy to make and saves you precious $$ and gas from having to wait in that super popular coffee chain drive thru lane!

20 Ways to Hot Dog Your Hot Dog!!

Hot Dogs and summer go together like chocolate and peanut butter, right?  With Memorial Day closing in I thought it would be nice to share a bunch of hot dog recipes with y’all.

First up….

I made this DELICIOUSNESS for my family and they were super SUPER grateful.  I do have to give credit to my wonderful hubby for first introducing us to the Sonoran Hot Dog back last summer.  How we managed to live just 2 hours from the birth place of this amazing hot dog and not actually have one until we moved back to Texas is beyond me.  If you’ve never had a Sonoran Hot Dog you MUST try one.  They are SO DELICIOUS!  Here is a little fun history write up on them.  I love the writer calls them “like a chili dog on steroids! It’s really not hard to make at all.

What you will need:
bacon (preferably mesquite or hickory smoked)
hot dogs
bolillo buns or regular hot dog buns ( I actually prefer regular buns)
tomatoes
onions
crumbly Mexican cheese
jalpapeno salsa
mayo
lemon
mustard
ketchup
pinto beans

Grill the bacon wrapped dogs in a skillet or on a grill if you like. Heat up the pinto beans in a sauce pan, stir occasionally.  Chop your onions and tomatoes and put them aside.  Crumble up your cheese.  Squeeze one lemon into a 1/4th cup of mayo and stir.  Warm buns in an oven or over a grill, or even on the bacon covered skillet.

Once the dogs are ready place them on a paper towel to absorb some of that excess grease.  While that happens get your buns ready.  I like to put the mayo, mustard and ketchup on the bottom.  Then I put my bacon wrapped dog in the bun, cover it with pinto beans, chopped tomatoes and onions, however much you prefer of the jalapeno salsa and then top it all with a handful of delicious crumbly white Mexican cheese.  Then ENJOY!

I severed ours with some delicious tortilla chips.  Now, I don’t like the bolillo bread so I actually use regular hot dogs buns.  This is my Sonoran hot dog with a regular hot dog buns.

Remembering Memorial Day and Memorial Day Crafts

Memorial Day is right around the corner. I want to say that honoring our fallen soldiers that fought for our freedom is most important. Lets all remember that and to teach our kids that memorial day is more than just a holiday from school or from work, it’s more than hot dogs and bbq, it’s more than swimming and playing ball outside. It’s remembering those that bravely gave their lives fighting for our free right to have a day off from work and school, our free right to bbq, swim and play outdoors, our free right to live in the USA. I found this wonderful website called Honor and Remember. You can find the names of fallen soldiers along with a lot more information. Here is the official Honor The Fallen site.

I looked up ways to teach our kids about Memorial Day and I came across these great sites:

Find Memorial Day parades anywhere here.

Here is a list of Memorial Day books for kids.

You can adopt a Soldier here and send them letters and care packages.

You can also take small US flags to a local cemetary and leave them at a soldier’s grave.

Light a candle, say a prayer, take a moment of silence or release a balloon at 3pm on Memorial Day with your kids.

And then there are crafts…..

Blueberry Lemonade Cupcake Recipe

I haven’t posted a recipe in a really long time, huh?  My hubby works a lot….A LOT!  If he isn’t at work at WORK, he is at work at home.  He is also an amazing cook.  I kinda tend to cook the same group of 10 things, hence the lack of blog posted recipes. Because of this, I lean on him for those extra different, new dinners.  With him working so much I’ve had to become a bit adventurous in the kitchen.  David (the hubs) is one of those people that can throw food and spices together and create something worthy of a 5 star fine dining restaurant.  Being married to him for over 9 years now and an avid food network watcher, I’ve learned to be “daring” with food.

Now, this recipe today isn’t “daring” per se but it is delicious!!  I’m simply letting all my awesome readers to stay tuned in….recipes are coming!!!

And now for the recipe!  First, this is a Betty Crocker recipe.

For these DELICIOUS Blueberry Lemonade Cupcakes you will need:

For the cupcakes…

box Betty Crocker® SuperMoist® lemon cake mix
fresh blueberries- 1 1/2 cups
vegetable oil- 1/3 cup
grated lemon peel- 1 tbsp
package of cream cheese- 3 oz, softened
eggs- 2
water- 3/4 cup

For the frosting…

powdered sugar- 2 1/2 cups
unsalted butter, softened- 3/4 cup
grated lemon peel- 1 teaspoon
kosher (coarse) salt- 1/2 teaspoon
vanilla- 1 1/4 teaspoons
milk- 1 tablespoon
fresh blueberries- 1 cup

Now, heat your oven to 375°F (350°F for dark or nonstick pans). Line cupcake liners in your 24 count cupcake pan.  Then, in a bowl  toss 2 tbsp of the dry cake mix with 1 1/2 cups blueberries to coat and set aside. Get out a mixing bowl and  beat remaining dry cake mix, water, oil, 1 tablespoon grated lemon peel, eggs and cream cheese with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. Carefully fold in dry mix coated blueberry mixture into batter. Once mixed fill each up 2/3 full.

Bake for about 20 minutes or until toothpick inserted in center comes out clean and the tops are golden brown. Cool 5 minutes then remove from pan to cooling rack. Cool completely for an hour.

To make the frosting, beat powdered sugar, butter, 1 teaspoon lemon peel, the salt, vanilla and 1 tablespoon milk on high speed about 4 minutes or until smooth. If it needs more milk  add it a teaspoonful at a time. Frost cupcakes with frosting and garnish with fresh blueberries.
