Easy Incredibly Delicious Coconut Curried Lamb

Oh. My. That’s all I can say about this Coconut Curried Lamp with Sweet Potatoes that I created. It’s an adaption of several other recipes and a bit of self knowledge being that I am half Pakistani. I actually surprised myself with this one. It is INCREDIBLY DELICIOUS! It’s the perfect combination of flavors and is not too spicy. That half white part of me can’t handle too much spice.

This is Coconut Curried Leg of Lamb with Sweet Potatoes severed over Jasmine Rice.

Easy Incredibly Delicious Coconut Curried Lamb

Recipe type: Crock Pot, Slow Cooker
Cuisine: Middle Eastern, Pakistani, Indian
Serves: 6
  • Boneless Leg of Lamb (about 3 lbs)
  • ½ cup chopped white onion
  • 3 tablespoons of mild curry paste
  • 1 tablespoon of ginger paste
  • 1 tablespoon of minced garlic
  • 3 large sweet potatoes
  • 1 can 13.5 oz coconut milk
  • 1 can diced tomatoes 14.5 oz
  • salt and pepper to taste
  • 2 tablespoons of coconut oil (any oil will work)
  • 1 cup Jasmine rice
  1. Season your lamb with salt and pepper and let it rest while you prepare the coconut curry.
  2. In a sauce pan heat your oil and onions over medium heat until onions are lightly brown.
  3. Add 3 heaping tablespoons of curry paste and a tablespoon each of ginger paste and minced garlic.
  4. Heat for a minute before adding the whole can of coconut milk.
  5. Heat the sauce over medium heat, stirring often for about 5 minutes.
  6. Place lamb in crock pot set on low.
  7. Pour coconut curry over lamb and let cook for 8 hours.
  8. Around the 7 hour mark you then added peeled and chopped sweet potatoes. I chopped mine to be big and chunky. For thicker sauce, set the crock pot on high and allow to cook uncovered for an hour. This step can be down at the 7 hour mark or after.
  9. Prepare Jasmine rice according to package and serve Coconut Curried Lamb over rice.

Dreamy Latin Inspired Coffee

My Latin flavored coffee actually made the pastries taste BETTER! It was DREAMY.  So dreamy, we had them along with the coffee for an after dinner dessert.  I’m not usually one that buys decaf coffee but for this creamer I will.  I’m convinced the delicious Latin inspired flavored from Coffee-mate would make any coffee taste amazing.

It’s Back To School time again, are you ready? I know I’m not!

I can’t believe it’s already time to send my Alice back to school!! When did she get so big and where did our summer go?  My sweet baby girl is in 1st grade now!  Wow, the time really does fly by!  I’m incredibly blessed to be a preschool teacher at the very same Christian private school my baby girl attends. I can peak in on her from time to time.  I can only image how hard it is for all the parents out there that have to wait till the end of the school or work day to see their kids again.

I know we sometimes count down the days till school is back in session and we can have a moment of piece and quiet in the house! Then suddenly the first day of school is tomorrow and you’re not ready for them to go!!

THEN….there are the supplies, clothes, shoes, food for lunches! I have everything ready for Alice and I’ve got to let you know about the yummy Fruit Burst® Squeezers from Del Monte® I found while shopping at Walmart recently. Alice LOVES them and I love that she’s getting a serving and a half of fruits and veggies without knowing she’s eating her veggies!!
